Biscoff Brownies

Biscoff Brownies

Let me introduce you to this delicious Biscoff Brownie! Very chocolatey and fudgy brownie with a layer of Biscoff spread in the middle and crushed biscuits inside and on the top. Super easy and quick to make and you don't even need any electrical equipment.

Ingredients:

  • 160g butter
  • 200g dark chocolate (chopped)
  • 3 large eggs
  • 155g sugar
  • 1 teaspoon vanilla extract
  • 65g flour
  • 15g cocoa
  • Pinch of salt
  • 270g Biscoff spread
  • 90g Biscoff cookies (chopped)
  • Plus 6 Biscoff cookies for decoration

Instructions:

  • Preheat your oven to 180C (no fan) and line your 24cm square tin with baking paper.
  • Place chopped butter (160g) and chocolate (200g) in a saucepan over a low/medium heat. Let it melt whilst stirring from time to time. You don’t want your chocolate to stick to the bottom of the pan. Once melted leave to cool while you work on the next step.
  • Chop the Biscoff biscuits (90g) into 3-4 parts.
  • Place the Biscoff spread (270g) into a small bowl and set aside.
  • Add the eggs (3), sugar (155g) and vanilla extract (teaspoon) into a bowl and mix them together using a whisk for a minute or two until it all becomes light in colour and fluffy.
  • Slowly pour your cooled chocolate mixture into the eggs whilst combining gently with a whisk.
  • Sift in the flour (65g) with cocoa (15g) and pinch of salt then slowly incorporate until combined.
  • Stir the crushed Biscoff biscuits into your mixture.
  • At this point I like to place the Biscoff spread into a microwave for 10seconds so that it’s easier to work with.
  • Pour half of your brownie mixture into the tin.
  • Spread the Biscoff spread on top of the brownie and cover it with the rest of brownie mixture.
  • Cut 6 Biscoff biscuits into halves and place them on top of your brownie.
  • Bake for about 23-25mins.

Once baked, I try my best to let it cool for a few hours for best results, but you know... it's not easy to do. 😉 ENJOY! 🙂
