Chocolate Crinkle Cookies

HAPPY DECEMBER! The best month of the year is finally here and I can now begin sharing my Christmas recipes with you! We’re starting with chocolate cookies that look like they are covered in snow, aka CRINKLE COOKIES! 😀 

This recipe makes around 18 cookies

Ingredients:

  • 2 large eggs
  • 70g milk chocolate
  • 65g coconut oil
  • 70g light muscovado sugar 
  • 60g granulated sugar
  • 155g plain flour
  • 5g baking powder
  • 60g cocoa
  • 25g chopped almonds (optional)
  • Pinch of salt

Decoration:

  • 45g icing sugar
  • 30g granulated sugar

Instructions:

  • Melt the chocolate in a microwave using 10-15second intervals, stir in-between and set aside for a few minutes. 
  • Chop the almonds, if using.
  • Place the eggs, slightly cooled melted chocolate and coconut oil in a big bowl and whisk together (using a hand whisk) for about 2 minutes. 
  • Add the dry ingredients (chopped almonds too, if using) and fold until combined. 
  • Place the dough in the fridge for about 30minutes.
  • In the meantime prepare the decorating sugars: place the icing sugar in a small bowl and granulated one in another. 
  • Preheat the oven to 180C fan and line a baking tray with some baking paper.
  • Remove the dough from the fridge and using a scale, start weighing the dough into portions of around 30g. Roll each one into a ball and then roll each ball in granulated sugar first*, followed by a thick coat of icing sugar. 
  • Place the cookie balls on the prepared tray and make sure to leave some space around each. I baked 9 cookies at a time. Bake for 10-11 minutes.

    NOTE: I absolutely loved eating these chocolate crinkle cookies while they were still quite warm! 😉 They are crunchy on the outside and soft in the middle.

*I’ve recently discovered this very useful tip when I was reading the Best Chocolate Crinkle Cookie Bake Off article. Granulated sugar absorbs the additional moisture and allows the icing sugar to stay white and in great condition! You can still bake these without the granulated sugar coat, but your icing sugar may turn a little yellow after you take the cookies out of the oven.
