Cinnamon Plum Cake

First Autumn recipe of this year for the cosy evenings in or the slower weekends is HERE! The soft cake layer with a blend of Amaretto & lemon flavours paired with plums coated in cinnamon. And if that wasn’t great enough… the cake is also topped with a very generous amount of crumble. This cake doesn’t require a lot of effort to prepare, bakes in less than 40 minutes and pleases all of the taste buds when you try it. 

Ingredients:

Crumble: 

  • 50g plain flour
  • 35g granulated sugar
  • 30g butter – melted 

Cake:

  • 80g butter – melted
  • 145g granulated sugar
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 35g Amaretto
  • 80g greek yoghurt
  • 180g plain flour
  • 5g baking powder
  • Pinch of salt
  • Zest from 1 lemon
  • 30ml lemon juice
  • 4-5 plums
  • 1 teaspoon of cinnamon 

Instructions:

  • Preheat the oven to 180C – no fan. 
  • Melt the butter (for the cake layer) in a microwave and set aside to let it cool. 
  • Cut the plums into quarters and place in a medium bowl. Add a teaspoon of cinnamon, shake the bowl until the cinnamon coats the plums and set aside.
  • Line the bottom of a 22cm round (spring form) tin with baking paper. Grease the sides of the tin with a little bit of butter. 

    Crumble:
  • Place flour and sugar in a bowl. Melt the butter in a microwave (no need to cool) and pour it into the bowl. Using a fork, stir until combined – the mixture should start forming into crumbs. Place in the fridge while you prepare the cake layer. 

    Cake:
  • Place sugar, melted butter, eggs, vanilla extract and Amaretto in a mixing bowl. Whisk for about 2 minutes until well combined. 
  • In a bowl stir together flour with baking powder and add it to the wet ingredients. Using a spatula, stir until almost combined. 
  • Add greek yoghurt, lemon juice and zest and slowly stir until combined. Try not to over-mix.  Pour the cake batter into the prepared tin. 
  • Place the cinnamon covered plums over the cake batter and sprinkle the whole cake with crumble. 
  • Bake for about 35mins or until a bbq skewer inserted in the middle comes out clean.
