
These chocolate orange cookies will be perfect to bake for your loved ones this Christmas – although you can make them at any time during the year. If you ever tried and loved Terry’s Orange chocolate (not an ad!) be careful as you might just fall in love with these cookies too!
This recipe makes around 14 cookies.
Ingredients:
- 110g unsalted butter – room temp
- 80g light brown sugar
- 50g granulated sugar
- 1 egg
- 1 tablespoon vanilla extract
- 20g cocoa powder
- 210g plain flour
- 5g baking powder
- Pinch of salt
- 100g chopped Terry’s Orange chocolate*
- 15g freshly squeezed orange juice
- Orange zest from one orange
Decoration:
- 160g dark chocolate – melted
- Orange zest
*You can substitute with milk chocolate.
Instructions:
- Preheat your oven to 170C – fan.
- Place the butter and both sugars in a mixer bowl and beat for 2-3mins until creamy.
- Add the egg with vanilla extract and mix until combined.
- Add the flour, baking powder, cocoa powder, salt, chopped chocolate, orange juice and zest. Stir until incorporated.
- Weigh around 45g of dough, roll into a ball and then flatten it slightly, so you end up with a thick & & round cookie dough.
- Preheat the oven to 170C fan.
- Line a baking tray with baking paper and place 7 cookies on the tray leaving some space around them as they do spread whilst baking. Best to bake these in two batches.
- Bake for 11-12 minutes.
- Leave to cool.
- Melt the dark chocolate in a microwave using 10-15 seconds intervals, stir in-between. Pour the chocolate into a small bowl.
- Dip each cooled cookie half way in the chocolate, remove the excess chocolate from the bottom of the cookie, place back on the baking paper/cooling rack and decorate with some orange zest on top. Leave to let the chocolate set.
